Chef career

London born Alex Dilling grew up in California and discovered his fondness for food from a young age. He explored various cooking techniques and products through his travels and developed a curious and passionate palate from trying “anything and everything” from the vast range of European cuisines. Alex has sealed his enviable culinary reputation by using classical French references to create modern dishes using the finest seasonal ingredients in the world.

His culinary career began under the legacy of Alain Ducasse at Adour in New York City. Mentored and guided by the esteemed Didier Elena and Tony Esnault, Alex and his team attained two Michelin stars in early 2012. Progressing through to the crown jewel of caviar restaurants, Caviar Russe also in New York, there, Alex found his love for caviar which remains one of his most celebrated ingredients.

After returning to the UK, Alex was the Executive Chef at Helene Darroze at The Connaught and The Greenhouse, maintaining two Michelin stars for both.

Alex’s namesake restaurant opened in September 2022 in the five star Hotel Café Royal in London. Here, his 34 cover restaurant broke records by achieving two Michelin stars just six months after opening. In 2024, the restaurant was named on “The 50 Best” Discovery list.
